12 oz. Roasted Garlic Summer Sausage, medium diced
1 medium onion, small diced
2 cloves garlic, minced
1 teaspoon dried oregano
1lb. Penne pasta, cooked according to package directions
Pinch of Salt and pepper
2 15-oz cans petite diced tomatoes
1 cup of fresh basil, chiffonade
1 6 oz. block Brushchetta Mozzarella, shredded
Instructions
Heat a medium-sized skillet on medium-low heat.Add sausage and onions. Heat until the sausage releases its juices and onions are translucent; about 10 minutes.
Add garlic and cook for one minute. Add oregano, salt and pepper. Cook for an additional 3 minutes.
Add the tomatoes and cooked pasta. Stir until pasta and tomatoes are warm.Add basil and cheese and serve.
