Spicy Sausage & Bean Chili

Serves 6

 

Ingredients

  • 12 oz Spicy Cajun Smoked Summer Sausage, minced
  • 1 medium onion, small diced
  • 2 cloves garlic, minced
  • ½ teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon chili powder
  • Pinch of Salt and pepper
  • 1 28-oz can crushed tomatoes
  • 1 15-oz can diced tomatoes
  • 1 15-oz can black beans rinsed and drained
  • 1 15-oz can pinto beans rinsed and drained
  • 1 15-oz can dark red kidney beans rinsed and drained
  • 7 oz Monterey Pepper Jack Cheese, shredded
  • Corn tortilla chips
  • Sour cream optional

 

Instructions

  1. Heat a medium Dutch oven on medium-low heat.  Add minced sausage and onions, stirring until translucent; about 10 minutes.
  2. Add garlic and cook for one minute. Add cumin, paprika, chili powder, salt and pepper. Add the tomatoes and beans. Bring to a simmer and cook for 30 minutes.
  3. Ladle the chili into bowls and serve with shredded cheese, tortilla chips and sour cream.
