Ranchero Southwest Wrap
Serves 4 wraps
Ingredients
- 4 large flour tortillas
- 12 oz Spicy Cajun Summer Sausage, small diced
- 7 oz Monterey Pepper Jack Cheese, shredded
- 4 Romaine lettuce leaves chopped
- 2 plum tomatoes, chopped
- ¼ cup corn niblets
- ¼ cup minced cilantro
Instructions
- Heat the sausage in a skillet over medium heat just until warmed.
- Combine remaining ingredients in a medium-sized bowl.
- Assemble wraps. Divide the cheese and sausage mixture over the flour tortillas. Roll up tortillas.
- If desired, the tortilla can be warmed in the microwave for 30 seconds just before serving.
