Morning Harvest Breakfast Burrito

Serves 4

 

Ingredients

  • 5 oz Spicy Cajun Summer Sausage, small diced
  • 1 small onion, finely minced
  • 1 large tomato, diced
  • 1/2 cup cilantro, chopped
  • 8 eggs, beaten
  • 7 oz Monterey Pepper Jack OR Vermont Extra Sharp Cheddar, shredded
  • 4 flour tortillas

 

Instructions

  1. In a medium nonstick skillet, heat the summer sausage, onion, and tomato until warmed.
  2. Add the cilantro and then add the eggs. Cooked until the desired doneness.  Remove from heat.
  3. Spread out the flour tortilla onto a cutting board. Divide the egg mixture among the tortillas, then sprinkle on the cheese.  Roll up and enjoy!
