Morning Harvest Breakfast Burrito

Ingredients
- 5 oz Spicy Cajun Summer Sausage, small diced
- 1 small onion, finely minced
- 1 large tomato, diced
- 1/2 cup cilantro, chopped
- 8 eggs, beaten
- 7 oz Monterey Pepper Jack OR Vermont Extra Sharp Cheddar, shredded
- 4 flour tortillas
Instructions
- In a medium nonstick skillet, heat the summer sausage, onion, and tomato until warmed.
- Add the cilantro and then add the eggs. Cooked until the desired doneness. Remove from heat.
- Spread out the flour tortilla onto a cutting board. Divide the egg mixture among the tortillas, then sprinkle on the cheese. Roll up and enjoy!
