12 oz Traditional Beef Summer Sausage, small diced
1/2 medium onion, small diced
1 green or red bell pepper, small diced
1 large cooked russet potato, small diced
8 eggs, cracked in a bowl
7 oz Monterey Pepper Jack OR Vermont Extra Sharp Cheddar, shredded
Instructions
Preheat the oven to 350 degrees. Then preheat a large cast-iron skillet on medium heat. When the skillet is warm, add the sausage, onions, and peppers. Stir until the sausage browns and the vegetables release their juices.
Add the potatoes and cook for 3 minutes. Pour the eggs over the vegetables and place the skillet in the preheated oven.
Cook for about 10 minutes or until desired doneness. Sprinkle with your choice of shredded cheese and serve warm.
