Garden Skillet Frittata
Serves 4
Ingredients
- 5 oz. Applewood Smoked Summer Sausage, small diced
- 1 small shallot, finely minced
- 2 cups spinach, washed
- 8 eggs, beaten
- 6 oz. Monterey Pepper Jack Cheese OR Alpine Baby Swiss, shredded
- 5 medium button or cremini mushrooms, thinly sliced (optional)
Instructions
- Preheat the oven on bake to 350° F.
- Sauté sausage, shallots, spinach and mushrooms in a 10-inch skillet on medium heat.
- When spinach is wilted and mushrooms are dry, stir in eggs until gently set.
- Place the skillet in the oven until eggs are fully cooked (~10 min).
- Sprinkle with cheese, cut into 4 wedges, and serve.
