Garden Skillet Frittata

Serves 4

 

Ingredients

  • 5 oz. Applewood Smoked Summer Sausage, small diced
  • 1 small shallot, finely minced
  • 2 cups spinach, washed
  • 8 eggs, beaten
  • 6 oz. Monterey Pepper Jack Cheese OR Alpine Baby Swiss, shredded
  • 5 medium button or cremini mushrooms, thinly sliced (optional)

 

Instructions

  1. Preheat the oven on bake to 350° F.
  2. Sauté sausage, shallots, spinach and mushrooms in a 10-inch skillet on medium heat.
  3. When spinach is wilted and mushrooms are dry, stir in eggs until gently set.
  4. Place the skillet in the oven until eggs are fully cooked (~10 min).
  5. Sprinkle with cheese, cut into 4 wedges, and serve.
