12 oz Spicy Cajun Smoked Summer Sausage, small diced
1 medium onion, small diced
1 clove garlic, minced
½ teaspoon ground cumin
½ teaspoon paprika
½teaspoon chili powder
Pinch of Salt and pepper
1 15-oz can black beans or pinto beans, rinsed and drained
Cilantro, chopped
2 tomatoes, diced
Shredded lettuce
1 lime cut into 6 wedges
1 7 oz. block Monterey Pepper Jack, shredded
Corn or flour tortillas
Sour cream optional
Instructions
Heat a medium skillet on medium-low heat.Add sausage and onions, stirring until translucent; about 15 minutes.
Add garlic and cook for one minute. Add cumin, paprika, chili powder, salt and pepper. Add the beans and cook for an additional 3 minutes.
Drop the temperature immediately to a simmer for 15 minutes and then stir in all the beans.Continue simmering for 30 minutes.
Ladle the bean and sausage mixture onto the tortilla and serve with the tomatoes, cilantro, lettuce, lime juice and shredded cheese. Serve with sour cream on top.
