Early Riser Potato, Egg & Broccoli Bowl

Serves 4

 

Ingredients

  • 12 oz Applewood Smoked Summer Sausage, small diced
  • 3 cups cooked Broccoli florets
  • 1/2 red pepper diced
  • ½  red onions, diced
  • 1 pound cubed and cooked Yukon gold or russet potatoes
  • 4 large eggs cooked over easy
  • 7 oz Vermont Extra Sharp Cheddar, shredded

 

Instructions

  1. Combine all ingredients in a skillet except for the egg and cheese.  Heat until hot.
  2. Divide into bowls, and top with eggs and shredded cheddar.
