Early Riser Potato, Egg & Broccoli Bowl

Ingredients
- 12 oz Applewood Smoked Summer Sausage, small diced
- 3 cups cooked Broccoli florets
- 1/2 red pepper diced
- ½ red onions, diced
- 1 pound cubed and cooked Yukon gold or russet potatoes
- 4 large eggs cooked over easy
- 7 oz Vermont Extra Sharp Cheddar, shredded
Instructions
- Combine all ingredients in a skillet except for the egg and cheese. Heat until hot.
- Divide into bowls, and top with eggs and shredded cheddar.
