Bountiful Beef & Vegetable Soup

Serves 4

 

Ingredients

  • 12 oz. Traditional Beef Summer Sausage, medium diced
  • 1 medium onion, small diced
  • 3 stalks celery, small diced
  • 2 medium carrots, small diced
  • 5 medium button or cremini mushrooms, thinly sliced (optional
  • 2 cloves garlic, minced
  • 1 Tablespoon tomato paste
  • ½ teaspoon dried oregano
  • Pinch of Salt and pepper
  • 8 cups of water
  • 1 cup small, shaped pasta such as shells or elbows
  • ½ cup frozen peas

 

Instructions

  • Heat a large Dutch oven on medium heat.  Add sausage and vegetables, stirring until the vegetables are translucent, about 15 minutes.
  • Add garlic and cook for one minute. Add tomato paste and oregano, salt, and pepper. Cook an additional 3 minutes.
  • Add the water and bring it to a boil.  Drop the temperature immediately to a simmer and then add the pasta.  Continue simmering until pasta is fully cooked.
  • Add frozen peas. Simmer for an additional 2 minutes.  Serve with your favorite loaf of bread or salad.
