12 oz. Traditional Beef Summer Sausage, medium diced
1 medium onion, small diced
3 stalks celery, small diced
2 medium carrots, small diced
5 medium button or cremini mushrooms, thinly sliced (optional
2 cloves garlic, minced
1 Tablespoon tomato paste
½ teaspoon dried oregano
Pinch of Salt and pepper
8 cups of water
1 cup small, shaped pasta such as shells or elbows
½ cup frozen peas
Instructions
Heat a large Dutch oven on medium heat.Add sausage and vegetables, stirring until the vegetables are translucent, about 15 minutes.
Add garlic and cook for one minute. Add tomato paste and oregano, salt, and pepper. Cook an additional 3 minutes.
Add the water and bring it to a boil.Drop the temperature immediately to a simmer and then add the pasta.Continue simmering until pasta is fully cooked.
Add frozen peas. Simmer for an additional 2 minutes.Serve with your favorite loaf of bread or salad.
